Potassium Bromate is a white crystalline powder or colorless crystals. In baking, it acts as a dough conditioner, helping to increase the volume of bread, improve the elasticity of the dough, and produce a desirable texture in the final product. It achieves this by oxidizing gluten, a protein present in wheat flour, which strengthens the dough structure. However, some studies have shown that Potassium Bromate can be converted into a potentially carcinogenic compound during baking, leading to health concerns. As a result, its use has been replaced with alternative dough conditioners or banned in various parts of the world.
